Orange extract has long been a go-to for a fruity zest in baked goods, but waiting for it to fully pull the flavor from the peels can be frustrating, and store-bought versions are often mediocre and filled with who knows what. 

Our use of N2O revolutionizes the experience by reducing the wait through pressure and Hippie Whippy™ high quality nitrous oxide, which speeds up the process dramatically and lets you choose your own oranges for flavor and the assurance that you’re only putting the healthiest ingredients into your body.

[Note: This recipe is for a one pint whipped cream dispenser.]

Ingredients

2 large Oranges
14 ounces Vodka

Preparation:

  1. Zest 2 large oranges with a zester or peeler. Make sure to avoid as much of the white pith as possible because it will add a bitter taste during the extraction.
  2. Place the zest and vodka into the whip cream dispenser.
  3. Close the lid, insert 8 grams of nitrous oxide, shake, let sit for 5 minutes, add another 8 grams and shake again
  4. Place in the refrigerator for 7 days.
  5. After 7 days, remove the siphon from the fridge. 
  6. Place the dispenser upright and place a glass over the spout to catch any overflow that may come out when emptying. Carefully empty the gas from the dispenser by slowly squeezing it out. NOTE: Some liquid may come out, make sure to position the glass so it can catch any overflow. 
  7. Once the dispenser is empty of gas, unscrew the cap and strain the contents into a measuring cup. 
  8. Place the strained extract into a container. 

You’re now ready to use the orange extract for cooking, cocktails, or whatever you desire.
