This vinegar infusion was made popular in the 70s by herbalist and author Rosemary Gladstar and has been boosting immune systems and clearing out the sinuses every fall and winter ever since. We recommend using only organic ingredients: apple cider vinegar with the mother (the murk at the bottom of the jar) included and local honey for the best results. 

This recipe is based on Rosemary’s original, but there have been many others out there. With this base recipe there are many possibilities to experiment with additional ingredients. We personally like adding dried elderberries. Have fun experimenting. 

The best part is that by using Hippie Whippy™ high quality N2O, you both speed up the infusion while helping the flavors mix. 

For purists who want a more natural infusion: you can pour all ingredients into a quart jar after the nitrous oxide has finished and let them continue to steep as long as you feel is proper. When finished, your fire cider will last for up to a year in the fridge. This recipe can be used as a tonic, salad dressing, marinate, rub, and more. There are so many possibilities!

One caution: We recommend using ONLY stainless steel containers for long term vinegar infusions because other metals may not handle the acidity of vinegar well. 

[Note: This recipe is for a one liter whipped cream dispenser.]

Ingredients

2 Jalapeno Peppers
1 Lemon
1 medium Onion
2 springs of Rosemary
10 cloves of Garlic
½ cup Ginger Root
½ cup Horseradish Root
½ cup TurmericRoot
½ tablespoons Black Peppercorns
1 large pinch Cayenne pepper
~2 cups Apple Cider Vinegar
~¼ cup Raw Honey

Preparation:

  1. Cut and mince all the ingredients. TIP: The more surface that’s available for infusion, the better the N2O can permeate, so cut smaller pieces.
  2. Put all ingredients into a 1 liter whipped cream dispenser.
  3. Push the ingredients down with a spoon or spatula and cover with apple cider vinegar. When everything is completely submerged, give the dispenser a tap or two to release any air pockets. Top off with more vinegar if the level drops to below the solids.
  4. Insert 8 grams of nitrous oxide into the dispenser and gently shake 3–5 times. 
  5. Let sit for 1–3 minutes.
  6. Insert another 8 grams of nitrous oxide into the dispenser and place it in the refrigerator for around 24 hours.
  7. After 24 hours, take the dispenser out of the fridge.
  8. Keep the dispenser upright and place a glass over the spout to catch any overflow that may come out when releasing the N2O. Carefully empty the gas from the dispenser by slowly squeezing it out. NOTE: Some liquid may come out, so make sure to position a glass to catch any overflow.
  9. Once the dispenser is empty of gas, unscrew the cap. The brew should be bubbling as the bubbles work themselves out.
  10. There are now two options: You can immediately strain out the solid ingredients through a cheesecloth and strainer, or you can pour all ingredients into a quart jar to continue a slow infusion for longer if desired. When ready, strain through the cheesecloth and strainer.
  11. When the final straining is done and the fire cider is in a pure liquid form, add a sweetener (usually about ¼ cup of honey) to taste. 

The finished brew can be refrigerated and will keep for up to a year, although we’d be surprised if it lasts that long!
